Rosemary Lamb Pâté

Guanciale Cotto

When we break down whole hogs from Autumn Olive Farm, we debone the skulls, trim the jowls “just so,” and cure them with our house guanciale aromatic blend. Basted with red wine as they steam-bake, they can take your dishes (pasta or otherwise) to another level. Please specify whole or sliced, and include thickness preference if the latter is your vibe. $29.99/lb.

CLASSIC PASTRAMI OR Beef Tongue Pastrami

Smoked Turkey Neck

Briefly brined and smoked over hickory, these will add a smoky pop to your gravy, if that’s your style—also very welcome in a pot of beans or braising greens, turkey pot pie, or anywhere that needs some depth. Alpha-Gal friendly. $11.99 / lb.

Pâté de Campagne

Rustic, country-style, Southern-French variety pâté. French 6-spice and dazzling matrix. Each slice between ¼ - ⅓ pound. Order by the number of slices. $32.99/lb.

Back Bacon

Dry-cured and smoked boneless loin of pork. Similar to Canadian bacon. Sliced ~medium-thick. Order by the pound. Maximum 2 lbs per order! $32.99/lb.

Stock Meatballs

Why are meatballs on this list? Our answer: is it ever a bad idea to have a 4-pack of meatballs in your freezer? Excellent recovery for holiday meals bookending the big day. $19.99/lb. (Add Stock Bolognese to make it automatic—$24.99/qt for the bolo.)

LAMB ROASTS

From leg to shoulder, from shank to saddle to chop to neck. Type in your order or give us a call to talk it through or ask for recommendations. All lamb comes from the family of gurus at Meadow’s Pride Farm in Monterey, where fathoms of magic produces consistently perfect lamb.

LOCAL QUAIL

L&H Farm, tucked in the scenic hills of Greene County, raises Coturnix quail the way nature intended—ethically, sustainably, and with care. Their birds are rotated on fresh pasture, where they forage for grass, seeds, and insects. Their diet is supplemented with non-GMO feed and they’re provided free-choice access, so they eat naturally and grow at a healthy pace. Quail are butterflied and offered in pairs, where each quail weigh 4-6 oz each. Two per person recommended for a hearty meal. Limited quantity available! $28.00 per pound.

DUCK & PORCINI TERRINE

Coarse, concise terrine of duck and wild mushroom, brightened with fresh thyme and orange peel. Contains no offal. Star of the hors d’oeuvres platter! $32.99/lb, between 1/3 - 1/2 pound per slice.

HERBED TERRINE OF RABBIT

We’re excited to offer this rare terrine for the holiday—carefully deboned rabbits from Rainbow’s End Farm in Brookneal Farm are marinated in a fortified red wine reduction, then adorned with herbs and whole mustard seed among other bright and lively aromatics. Dainty and delightful. $39.99 / lb, between 1/3 and 1/2 pound per slice.

SCRAPPLE

House-made with cheeks, shank, tongue, and jowl—bound with top-quality cornmeal milled at Deep Roots Milling in Roseland, VA. Rich and balanced. Sold in small bricks, averaging ~one pound per chunk, so you can slice to your desired thickness. $22.99/ lb.
