tri-tip
The “upside-down” to picanha, this bottom sirloin muscle has a thicker, more defined grain and thinner fat coverage. Well-marbled and bursting with big beefy flavor, due in part to our 3-week dry-age, this muscle is incredible dry-rubbed with southwestern spices and grilled, but give it any flavors in any setting and it will soar. Adored on the west coast, and they won’t miss the chance to tell us so. 1.5 - 2.5 pounds each, $26.99 / lb.
oxtail
This delicacy is one of the deepest cuts of the beef animal in terms of flavor and mouthfeel. Dense and beefy protein surrounds the tail structure, encapsulated by a fluffy covering of fat that slowly melts away during braising. When we break down whole hogs from Autumn Olive Farm, we debone the skulls, trim the jowls “just so,” and cure them with our house guanciale aromatic blend. Also known as sirloin cap, this small roast of hands-down one of the best cuts of beef on the animal, period. A creamy fatcap protects the muscle during its three-week dry-age, and roasted whole or cut into petite culotte steaks, its tenderness and rich flavor are second to none, in our opinion. Weights range between 1.5 and 3 pounds; specify your desired heft and we will do our best to match. $39.99 / lb.

Whole GOOSE
We’re so fortunate to be able to offer Embden geese from Free Union Grass Farm this season! These birds are rich, tender, and succulent with a good-sized breast and a large thigh, with an abundance of fat, as is the goose’s way. As with duck, save that rendered fat for your next sauté. 9-15 pounds each, please note your desired weight and we’ll get as close as we can. An 11-pound goose will feed ~6. LAMB ROASTS
From leg to shoulder, from shank to saddle to chop to neck. Type in your order or give us a call to talk it through or ask for recommendations. All lamb comes from the family of gurus at Meadow’s Pride Farm in Monterey, where fathoms of magic produces consistently perfect lamb.
Smoked pork hock
We run the bottom 3” of pork shanks across the band saw and leave the skin a some meat attached, dropping them into a brown sugar brine, then smoking over hickory. Sure to add body, smoke, salt, and depth of flavor to your stew, chili, greens, or beans. Secret ingredient for the best pot liquor! $12.99 / lb, ~0.5 pounds each.
LOCAL QUAIL
L&H Farm, tucked in the scenic hills of Greene County, raises Coturnix quail the way nature intended—ethically, sustainably, and with care. Their birds are rotated on fresh pasture, where they forage for grass, seeds, and insects. Their diet is supplemented with non-GMO feed and they’re provided free-choice access, so they eat naturally and grow at a healthy pace.
