You can tell that something special is happening on Deep Rock Farm the moment your feet touch the grass. Massive, lumbering Piedmontese bulls pause their graze as you pass on to the main herd, which are clearly cut from a magical cloth due to their build and breed. The cattle group that rotates through the abundance of paddocks has been bred with Angus to manage dressed weight and to garner a layer of subcutaneous fat to catalyze dry-aging, resulting in large frames whose alimentary utility is second to none.
Piedmontese cattle are inherently larger and leaner due to their hypertrophic muscle growth (a truly unique idiosyncracy stemming from their inactive myostatin gene), and their meat is comically tender as the breed naturally builds less connective tissue. Couple this with eye-rolling flavor minerality and character, and it’s plain to see how fortunate we are to break down one of these animals per month, and why we’ve been working with Deep Rock Farm for the majority of our tenure in Charlottesville.
